We had the good fortune of connecting with Abbie Huckleby and we’ve shared our conversation below.

Hi Abbie, other than deciding to work for yourself, what else do you think played a pivotal role in your story?
Retiring from a corporate job that I loved and worked at for 31 years.

What should our readers know about your business?
I’m a plant based chef that prepares weekly meals to my clients. What sets us apart from others is that we are a company that makes 90% of our meals from scratch and only uses non gmo and organic plant based products. We take the comfort food that you grow up on and make them plant based and healther, yet still tasting like your mother made it. Our Meals Prep Services provides weekly menus that consist of 2 breakfast items an 7 lunch/dinner options and will be adding a kids menu in the coming months as well and offer desserts. What I’m most proud of is that I stepped out on faith to follow my passion and love of cooking and started a thriving business thats on the verg of expanding and growing through leaps and bounds. I’m so excited about the future and all the plans I have in my head and heart and can’t wait to see them come to pass. I wouldn’t say it was hard but it is a lot of work and I’m built to work hard because that is how I was raised. Learning from mistakes is the greatest way to learn and improve. I don’t take mistakes lightly nor do I run from them, I imbrace them and learn what was meant for me to learn from each situation. What I want the world to know about Abbie’s Plant Based Cuisine is that this brand was birth from love and passion for food and cooking. We take pride and put love in every dish we make from the preparing, cooking, packaging and deliver of our meals.

Any great local spots you’d like to shoutout?
Take them to a play at the Ensemble Theater, then dinner at Davis Street Cafe, then drinks and jazz at Martini Blu, Sambuca’s or Red Cat Jazz Cafe.

Rosalin Grace, my sister, my webpage designer, my taste tester, my encourager, my best supporter. Stacy Huckleby, my husband, my sous chef, my rock, my taste tester, my business partner, my coach, my cheerleader. Alayna & Laura Huckelby, my daughters, my cheerleaders, my encouragers, for believing in me when I didn’t.
