We had the good fortune of connecting with Brittany Collazo and we’ve shared our conversation below.
Hi Brittany, what role has risk played in your life or career?
Taking risks is such an important part of growth. And because growth comes from our failures and successes, I firmly stand by the old saying “I’d rather aim high and miss it by a little, than aim low and make it.” Lettuce Cook wouldn’t have been established had I not stepped out in faith and taken the risk. It has allowed me to meet so many wonderful people and be a part of some pretty special experiences. I remain grateful for the platform Lettuce Cook continues to provide me every day. Frankly, I can’t think of anything else I’d rather be doing than sharing my love of cooking with others.
Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Lettuce Cook is a live cooking experience, in person and/or virtually. Our lessons are available to all ages and groups and we work with you at your comfort and skill level. I believe this is one of the main things which set us apart from others. We gauge our success on satisfaction, not revenue. I want our clients to feel great about their experience. And it’s equally important for me to feel good about the experience. I request feedback to ensure expectations are exceeded. There will always be challenges in this type of business particularly given the various tastes each person has. I’ve found preparing fusion food works well when I’m teaching someone with a limited palate. My primary focus is to show making really good food doesn’t have to be hard or expensive.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
There are so many places to choose from. But I would have to start with places I grew up eating at like Best Burger in Stafford or Taqueria del Sol off of 45.

I would like to dedicate this shoutout to my mom (who is the cornerstone of my support system), my family (they’re always willing to try new recipes) and my wife (who continues to push me to be better than I was yesterday).
