We had the good fortune of connecting with Chefs Racquel Hainsworth and Randolph Lindo and we’ve shared our conversation below.

Hi Chefs Raquel and Randolph, we’d love to hear more about how you thought about starting your own business?
Thinking of the time and energy put into working a 9-5 for someone else’s vision and helping them become successful showed us that if we shift that same energy into our own passion, we could be just as successful or more. We’re starting from the bottom, so what’s most important is leaving something behind for the next generation to continue to build on to in order to build wealth in our own families.

Let’s talk shop? Tell us more about your career, what can you share with our community?
Palate Fusion introduces a modern and artistic approach to Cajun, Jamaican, and even Indian cuisines while providing Vegan options for all to enjoy. “Continuing our ancestors legacy” is a mindset that runs deep in our cuisines so we’re happy to know that we’re not only making our ancestor’s proud, but our parents and children as well.

Each of our paths crossed when we were younger, so learning each other again as adults has been a journey. We all portray various characteristics that sometimes seem like they’re on different ends of the spectrum, and that’s likely due to our personal and professional encounters ranging from Corporate America to Tattooing…along with a host of kitchen gigs while working our way through Culinary School. It wasn’t easy, as a matter of fact there are still times where we question “Am I on the right path in life?”, but each of our paths has taught us humility and how communicating and being open to constructive criticism will only help us grow in this new venture of entrepreneurship.

If we could inspire the world with one statement it would be: “Don’t miss out on an opportunity because of fear, always shoot your shot!”

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If a friend were coming to visit I’d probably have to start our itinerary at The Breakfast Club – there’s so much culture and our heritage is tasted in every dish that come out of their kitchen! Next up would be putting them on to Garlic Butter Crawfish and Snow Crab at the Boiling 88, and ordering some Shrimp Fried Rice to-go “for later”. For dessert we’d absolutely have to stop by The Dessert Gallery for…how long is this friend staying? But The Loving Hut and Earthly Goodness Vegan Ice Cream would be two amazing spots to convert anyone to Veganism!

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
Shoutouts would have to go to all the family and friends who encourage us to keep pushing and the customers who continue to support our vision. A special shoutout to our parents who molded us by making us start tasks over until we understood consistency and presentation. Lastly, a special shoutout would have to go towards our spouses who continue to hold down the household while we’re in the kitchen bringing our dreams to life.
