We had the good fortune of connecting with India Jefferson and we’ve shared our conversation below.

Hi India, what is the most important factor behind your success?
The most important factor behind my self is to ALWAYS BET ON ME. Constantly reminding myself that my lane is mine and what God has for me will be for me. Allowing myself to continue to better myself for me and my brand and believing I can obtain any goal I set.

Let’s talk shop? Tell us more about your career, what can you share with our community?
I’ve been cooking for as long as I can remember, however, a recently began to take my cooking seriously. Cooking and creating different recipes and dishes provide me with such a therapeutic feeling. Its natural, its easy. Moving to Houston after a life in the military was a huge and terrifying experience. Overcoming my fears meant me believing in myself, choosing me, my happiness and trusting God to figure out the rest. My brand represents me. I put my heart and soul into each meal I cook and each event I cater. I love to do what I do and I want that love to be shared and felt in every bite.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I’m pretty new to the city myself so I too have a list of places Id want to try. The Menil Collection is one place that I’ve been wanting to experience. I love art museums. Id take them to buffalo bayou part just to relax and enjoy the scenery then to Thirteen by James Harden or Davis Street at Hermann Park for good food AND drinks. I’m still working through the LONG list of restaurants I have saved in my notes to try.

Who else deserves some credit and recognition?
God! God has been the driving force behind it all. I joined the military straight out of high school and envisioned myself doing 20 years and retiring. During my time in service I began to take my cooking seriously. Everything happens for a reason and I’ve learned to never doubt God. I applied to Culinary school and trusted God to guide my move and put my faith to the test. I also thank God for an amazing group of friends and family that stand behind me and support me as much as possible and of Course my mother. Me being her only child and solely depending on each other she’s always supported all the crazy ideas and dreams I’ve wanted to follow. She’s raised me to be the woman I am today and she is my biggest motivation to repay her with the world.
