We had the good fortune of connecting with Lance Craig and we’ve shared our conversation below.

Hi Lance, what was your thought process behind starting your own business?
My wife was a stay home Military spouse and enjoyed making desserts, we decided to put a twist on cake jars with our own Cheesecake Jars and now Specialty waffles

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
Currently a US Army Health Care Specialist, my day to day involves screening Troopers for Health Issues and ensuring their medical readiness are up to date. I’ve learnt resiliency in the Army as well as to appreciate the little things, a bed, a car, a roof over our head, due to the days spent in the field and sleeping in tents. No day at work is easy as new challenges present themselves daily, the daunting task is ensuring they are all accomplished in a military manner. I want the world to know that we are for everyone and encourage happy families, friendships and hood dessert. My wife Is the backbone of our business and our son is the key ingredient to our success!

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Turkey Leg Hut, Kamp and any Car Show in the H-Town.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I want to shoutout my wife for baking her awesome desserts! My father-in-law for inspiring our Banana Pudding, and my mother and father for my entrepreneurial ways and my drive and motivation. Mom has Breast Cancer, so accomplishing any task or mission is my top priority, have to make her proud.
