We had the good fortune of connecting with olivia Paredes-Tolliver and we’ve shared our conversation below.
Hi olivia, what was your thought process behind starting your own business?
It started working in the Emergency Room for 15 years. From shift work to endless nights servicing the medical Industry, coffee was the most essential for healthcare workers. Before Keurig’s existed, Starbucks was open 24 hours, so who’s going? My answer always was “If you buy, I’ll Fly.”
Fast forward to the beginning of the pandemic when my answer changed to “I just want to sell coffee!” So, I learned how to make it.
Coffee is the most powerful beverage to American workers. I wanted to bring convenience, and accessibility to customers in their daily Environment, so I gradually created a mobile, POP-UP concept with a Bike Trike, where I can park and cater to with high level of hospitality and customer service.
What should our readers know about your business?
This was definitely a passion project started at the peak of the Covid Pandemic. When everything was shutting down and delivery was an essential option. I started brewing Cold Brew Coffee, packaged them in bottles and Ice chests and started delivering to friends, and coworkers. Today we have successfully serviced a variety of large businesses and vendor extremely high populated Events and Festivals.
I believe what sets Olive’s Coffee Garden apart from other coffee businesses is the mobile Pop-Up shop concept. Plus, the Coffee is on Tap! The custom-made Bike Trike provides a Nitro tap system. We aim to provide a product that is a higher quality experience compared to coffee from Keurig pods or simple brew from a local gas station.
Our Mission is to provide delicious and unique Iced Beverages in a quick and convenient manner, all while providing excellent customer service to consumers in a variety of Environments. We pride in servicing consumers primarily on the go who need a pick me up or nice refresher.
Every challenge was learned a lot through communication and time management. It wasn’t easy, it’s not supposed to be easy. However, you don’t have to do everything by yourself.
I want the world to know everyone involved in my roadmap of life helped me build this idea, this dream, this company, and for that I’m forever blessed and grateful.

My Late Husband Joshua Rayne Tolliver. Thank you for believing in me and always encouraging me to never give up. Thank you for your non-stop hard work and dedication to the business and to me. Thank you for being the heart of this dream that will continue to provide to our customers.
My Parents Ernesto & Sofia Paredes have always supported me through my dreams and goals. They are here to this day, extremely proud and helping any way they can.
The nurses and medical professionals throughout my years have always cheering me on. Giving me that spine and backbone with no hesitation when I need it. Thank you for giving me this opportunity to give back one coffee at a time!
