We had the good fortune of connecting with Kasey Bryant and we’ve shared our conversation below.

Hi Kasey, can you walk us through the thought-process of starting your business?
I’ve always had a huge passion for cooking and at an early age I started cooking, as my mother wasn’t able to at the time due to some medical issues, so at 10 years old I was cooking for our family of 5 and every since then I enjoyed cooking. Once I got older I was taught by one of the best around Mikey Smith who was a huge mentor to me and really taught me a lot about cooking. Then at 18 I started cooking competition BBQ for 26 years, and from that point on my family and friends always told me that I needed to open my own restaurant because I had something special with my cooking that they thought I could really be successful. When I first started it was at my house and I named it KB’S Kitchen, so I would cook just about anything with my smoker and make deliveries to my family and friends, so July 2023, two of my friends Victor and Brandy Peres that I consider family bought Main Street Food Truck Park & Entertainment Center in La Porte, Tx and invited me out, so I went out and ended up helping them around the Food Truck Park for several months. After watching the other food trucks operate I asked Brandy Peres, if I could put a food truck at the park, and the answer was yes. I figured let’s start in a food truck and see how that goes before I started an actual brick and mortar restaurant. So, I started the process and boy what a journey after building one that I had to refuse at delivery, and then had the second one built in which is operating today. What a blessing it has been to be able to open a business in my hometown with two great friends, has meant a lot to me.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
The things that set me apart from the others I believe is my creativity when it comes to food, as I make a lot of my own sauces and coming up with ideals that other establishments in the food industry don’t really have. Everything we do at KB’s Kitchen is made using fresh products. I think I am most proud of the comments I get regarding the food that I put out to the community and surrounding communities. I have all ways wanted to give back and now I am able to give back to my hometown and that’s been a great experience and makes me feel really proud. When it comes to cooking there is a lot of trial and error along the way to develop the best product you can put out to the community and keep it consistent. One thing that I learned and preach to my employees all the time is being consistent with everything that goes out the window, as one mistake could lead to negative reviews and in the food industry the higher your reviews the more opportunities you will get with the community and your customers. I want the people to know that they can come eat at our establishment and feel welcomed with open arms and that we strive to put out a product that’s different, and really enjoyable.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
We would start at Main Street Food Truck Park & Entertainment Center, so they could see what I’ve been working so hard to do and has taken a lot of time away from my daily life, and I am sure they would want to try the awesome food we are serving at KB’S Kitchen. They would also get to see the great atmosphere that’s been developed with that good hometown family and friends feeling.

Kemah, Tx is also a great place to take them, so they can experience the Kemah Boardwalk.

Maybe catch an Astros or Texans game if they are down during the time one of them are playing. The Houston Museum District and Houston Zoo.

Who else deserves some credit and recognition?
Kory Bryant – My younger brother whom has been behind me throughout all the ups & downs I’ve experienced in my life, even though at times I am still a pain, he’s defiantly helped me get on the right path in life and I couldn’t thank him enough. Love Ya Bro

Kade Bryant – My older brother who passed away in Feb 2020 from a massive heart attack at the age of 45, every year several times a year he would get our family together and ask me to cook, in which all of our family gatherings I was the cook, but the memories we had will forever be cherished. RIP Bro

Uncle Phil (My Uncle was a huge mentor in my life and meant the world to me, and was extremely excited about me opening a food truck, it was unfortunate that he came down with Lung Cancer in 2023 and passed away before opened. In honor of him I named my Philly Cheesesteak “The Uncle Phil” I remember a conversation we had when he informed me he had Lung Cancer and I will never forget this “Your going to be the next Food Truck Millionaire”. Love You and RIP

Mikey Smith – The one who taught me how to cook and helped pave the way for me in cooking competition BBQ, RIP Big Mike you were truly a blessing in my life and this one is for you buddy.
