We had the good fortune of connecting with Lydia Montes and we’ve shared our conversation below.

Hi Lydia, is there something that you feel is most responsible for your success?
Having a positive attitude has definitely been the most important factor behind my success. As a small business owner I’ve crossed many obstacles. Reminding myself that my hard work will pay off & truly believing that has made a tremendous impact on my success.

What should our readers know about your business?
Our different flavored mini pancakes have made us stand out tremendously. A few of our unique flavors are red velvet, chocolate, and strawberry mini pancakes! I’m most excited for the expansion of our business. We are ready to take over all of Texas! Attending local markets has gotten me to where I am today. When I first started out I was determined to attend as many markets as possible to get my name known. In doing so I was able to grow my social media followers and be blessed with back to back catering bookings. This was not an easy journey. Some days I would work 2-3 events and wake up to do it all over again. What kept me going was reminding myself that all my hard work would be worth it for my family and I. My biggest lesson along the way has been to completely trust God and to not worry when the going gets tough. He is in control and will get you through anything! Ay Caramba Mini Pancakes was created with the goal to bring joy to people through our delicious mini pancakes. We will continue to whip up delicious recipes that bring a smile to your face!

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
If you’re ready for an all pink experience look no further than your favorite mini pancakes shop located at 8548 Broadway St. Houston, TX 77061. We have been remodeling to create a better experience for our customers. Join us October 16, 2022 for our re grand opening! We will have aguas frescas and the most delicious mini pancakes you’ve ever had with over 15 toppings to choose from!

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
My loving husband, Rene, has been my #1 fan/ supporter along this journey. There would be no Ay Caramba Mini Pancakes without him! Our dearest friends Valencia, Richard, Kaylin, Cheyenne, and Joseph have shown us the true meaning of friendship by constantly supporting us and celebrating our milestones. And last but not least our customers & social media followers have been so amazing by supporting us every time we sell our pancakes & booking us for their parties. We absolutely love the relationships we have built with you all!
