We had the good fortune of connecting with Chef Kay and we’ve shared our conversation below.
Hi Chef, what role has risk played in your life or career?
I think about risk as gambling…. Its 50/50 roll the dice and pray for the win.
Taking risks in life both personal & business has allowed me to grow a successful business as a food truck owner. I took a few losses along the way. i learned and grew from those experiences, stayed motivated & continued with the plan.
Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
I own a food truck “Kays Snack Shack” i provide fresh authentic creole southern full-filling snacks & eatz. I offer good quality food reasonably priced. Im different from other trucks because my food is created out of love it hits different. Like i tell my colleagues “i can give u the recipe to da sauce and still want taste the same” Im most excited about my restaurant in the near future. Getting to this point in my business was not a easy road. Ive been catering on and off since 2015 In between time i was working on other businesses. I decided to get focused in 2020 during covid cause when the world shutdown i was still working. I was catering & making deliveries all while social distancing. Cooking is my passion something i love doing so i decided i wanted a food truck. The lessons i learned along the way is stay prepared, organized & keep a positive mindset/attitude.. Kays Snack Shack is famous for it’s authentic Seafood Gumbo & its entire menu. Best food truck on da southside period!
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.

Who else deserves some credit and recognition?
