We had the good fortune of connecting with Hillary Kate Kotwal and we’ve shared our conversation below.
Hi Hillary Kate, why did you pursue a creative career?
Living in an creative world means dreaming, envisioning, and inventing. I have found I do best using my knowledge in a creative way. Telling people to eat healthy wasn’t enough to actually get them to eat healthy… however, getting people to eat healthier by making food art is WAY more than enough and so much fun.
I think of my creativity as one of my God-given talents, and I’m so very grateful for this career.
Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
In college, my tuition went towards teaching me how to cook. However, I also learned all the structures of amino acids and a bunch of antioxidants by name. I used the knowledge gleaned to become a registered dietitian and then helped grow a diabetes program prior to starting my business.
In the rural town we live in, there are a few choices to eat out. Fast food or Mexican food. The community really needed a spark to light a fire for healthy living. Once my private practice started, charcuterie fell in my lap and it took off. Except, I have an emphasis on health. Our food creations provide a wide array of fresh fruits and vegetables! There were so many steps and obstacles to overcome to learn how to start and maintain a business, and I still learn every day. Graze & Peace was born to share the bread that was broken for you. We have bibles on every table, pray with our customers when they are having a hard day, and serve our community as much as we can. I’ve learned that God always provides, and I want the world to know that this little business gives God all the glory.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
We would start out by renting a scooter from Sealy Scooters and ride around Main Street. When we get hungry, we’d stop by Graze & Peace for a healthy lunch or a smoothie. Then we’d shop downtown MainStreet at Patches, Bliss, and Twisted Willow. Of course we’d thrift around Redeemed & Restored Ministries and The Good Samaritan Shop too. There’d be trains that pass by but we just keep on riding around the city.
In the evening we’d attend a play at The Texas Theatre, owned by Kay Kenner & Erika Burttschell. We say hi to our friends who support the community like Austin County State Bank’s, Russ Rainwater & Sunnybrook Farm’s Rebecca Marek. Then we’d celebrate a good show at The Saddleback Saloon.
We’d stay at Country Dome Suites in Bellville, TX and wake up to go to church at First Baptist Bellville or First United Methodist Church Sealy and eat brunch at 22 North Holland.
Since everything is closed in small towns on Sunday, we’d have to drive in to Katy and visit The Local Table for dinner and some shopping at Cinco Ranch.
During the week we would find time to shoot at Texas Premier Sporting Arms and ride horses at Llewelyn Acres. We’d get coffee at The Perk in Bellville and eat at The Kenny Store. And of course get our nails done at Kim’s Nails & visit The Salon for primping.
And…There will be so much more coming in the spring. We just love seeing new business!

To God be all the glory. He gave me a supportive family, amazing friends, knowledgeable mentors, hard working employees, and a community that surrounds me with love. My church has been the biggest support. From partaking in my first Graze Table, to allowing me space to give nutrition counseling services to the community, to feeding my soul with truth and light, First United Methodist Church Sealy has extended so much grace & peace. And lastly, my mama for all her creative genes and her love & support.
