We had the good fortune of connecting with Lydia Springer and we’ve shared our conversation below.
Hi Lydia, we’d love for you to start things off by telling us something about your industry that we and others not in the industry might be unaware of?
I love this question! I would say the most overlooked thing in any creative industry, is Time. Time to prepare, time to train and learn the skills needed to do what you do each day, time to complete the actual project.
For my specific focus, outsiders can look at ingredient prices at the grocery store and compare it to a quoted cake and not understand where the large discrepancy is.
There are many cakes I’ve completed that from the start of the design process until the finished product is delivered, I have spent a total of 40+ hours on. Thats the equivalent of most full time jobs, so understanding the amount of time that goes into a cake order is a large portion of where your final price is coming from.
Please tell us more about your career. We’d love to hear what sets you apart from others, what you are most proud of or excited about. How did you get to where you are today professionally. Was it easy? If not, how did you overcome the challenges? What are the lessons you’ve learned along the way. What do you want the world to know about you or your brand and story?
I feel like as a former bride who went through the wedding planning process in era of social media where everything is posted and published, as well as someone who has worked behind the scenes on more cakes than I can remember, I feel like I can relate to my current clients on a more personal level to gain their trust that can lead to a stress free process for their event.
The most exciting part about my job is getting to meet new people at the beginning of one of the biggest events of their lives and seeing it through to the end. Watching all of their patience and hard work pay off with a beautiful day, however many months later, is such a reward honestly.
Now, there are always going to be learning curves and challenges. Baking is a science, and trial and error is the only way to find what works. Things like baking in a new oven, or a mixer over heating will always come up, but I’ve been lucky enough to work under some amazing chefs that have taught me how to adapt and always be prepared to have plans B-Z ready.
The biggest thing I’ve learned is to prepare early, work efficiently, have back up plans for your back up plans, and never be afraid to learn. Whether it be constructive criticism or suggestions, keep an open mind.
My brand and company is my heart. I want to make delicious and pretty sweets, but I also want clients to know who they are working with and build that trust so they know they have absolutely nothing to worry about when it comes to the desserts for their event.
From the first inquiry to the in person consultation and tasting, all the way to the delivery date, my goal is to make them feel at ease and confident that the tastiest part of their event is secured.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Well when anyone, especially those who are not from Texas comes to visit, this is going to be an all out foodie adventure. Texas has so much amazing food that it has to be the star of the show. From Bar-b-Que at McKenzie’s to Tex Mex at The Original Ninfa’s and everything in between. We love going to any sporting event, especially when it’s baseball season a visit to Minute Maid Park is a Must (Go ‘Stros)! We love Woodrow’s and Mcintyres on weekend game days, and Sawyer Park for weekday games after work.
The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My Husband Scott has been with me since day one of this journey. From being there through my final year of culinary school, and helping me navigate through all of my professional kitchen roles, to starting my own business for wedding cakes he has been with me through it all.
All the late night grocery runs when I ran out of butter, all the meltdowns (figuratively and literally) of feeling like the job would never get done, and being my biggest supporter when each final cake is delivered!
