We had the good fortune of connecting with Miranda Palmer and we’ve shared our conversation below.

Hi Miranda, what led you to pursuing a creative path professionally?
I started my Instagram page: @htxfoodandcoffee about a year ago while I was in paramedic school. My friends and I would spend weekends venturing downtown trying new coffee shops and searching for new restaurants. Creating a space where I could document and share our finds while also cultivating a creative outlet for myself seemed like the perfect distraction from the stresses of being a full time student while also working. Starting my page began on a whim and seemed like a fun pass time. It has slowly turned into something bigger and has brought forth opportunities and experiences I never imagined.

Let’s talk shop? Tell us more about your career, what can you share with our community?
I graduated from Paramedic school in July 2021. Going through the program definitely tested my resilience and work ethic. There were many late nights and many moments that I questioned my decision to go through the program and wondered if I had made the right decision. Finishing school is by far one of my greatest accomplishments and something I am incredibly proud of. Being able to make a difference in others lives is extremely rewarding and I look forward to a career that allows me to serve my community. I use my space on Instagram to highlight different coffee shops and restaurants in Houston and its surrounding areas. It has allowed me to make great connections and build a community of my own.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
An ideal day in the city would start with a stop at Tout Suit for their avocado toast and a hot vanilla latte. We’d hit a couple different coffee shops during the day making sure to pick from a few of my favorites: Catalina Coffee, Southside Espresso, Tenfold, Slowpokes, or Uncle Beans (which has the best patio)! A stop at Vinal Edge record shop would definitely be included and we’d venture through the surrounding resale shops. We’d stop at the Houston Museum of Natural Science to check out the newest exhibits and grab lunch at a new cafe in town. The night would end with at drink at 8th Wonder Brewery or Axelrad Beer Garden and a stop at Tinsley Park to get a view of the skyline would be a must!

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I’d like to thank my parents, my boyfriend Brandon, and my friends! Any idea that I put out to pursue they back me 100%. Having that support system is truly priceless.
