We had the good fortune of connecting with Rick And Rose Bengtson and we’ve shared our conversation below.

Hi Rick and Rose, we’d love to hear about how you approach risk and risk-taking.
We’ve both spent years working in fields where risk is part of the job—so our perception of risk might be a little different than most. In that context, flower farming is a different kind of risk.

Farming flowers—especially in Southeast Texas—is no small gamble. The weather is unpredictable (to put it mildly), and because we grow flowers rather than produce, traditional crop insurance options are limited. Grant access for small specialty growers can also be tough to come by. Choosing to do this work anyway, and to build a business around it, is a risk we take every day.

But we also believe risk is where growth happens. We experiment constantly—pushing crop timing, testing varieties, and learning what this land can handle and discovering what can thrive here with the right care and timing. Not every risk pays off, but the ones that do help us build something stronger, season by season.

Let’s talk shop? Tell us more about your career, what can you share with our community?
Our story is rooted in service—through careers in the military, law enforcement, fire, and healthcare. We’ve both spent our lives caring for others and showing up in hard moments, especially during COVID, when the world felt heavy and uncertain. Somewhere in the middle of it all, we kept returning to the idea of a farm. A place where we could grow, create, and start a new chapter—one filled with color, joy, and purpose.

We started with a small patch of land, a whole lot of determination, and the hope that we could grow something beautiful and lasting. But just as things were beginning to take shape, a tornado and flood tore through our land. It was devastating. But while we were picking up the pieces and rebuilding, something unexpected happened: flowers started blooming. Blooms that shouldn’t have made it through those storms were thriving. We looked at each other and just knew—we were going all in on flowers.

Since then, we’ve poured everything into this dream—early mornings, late nights, every spare moment between full-time jobs, and countless hours spent reading, learning, and taking courses to grow the farm we believe in. We’re still rebuilding, still learning, still shaping this farm into what we know it can be. Ice Moon Farms is a work in progress, rooted in resilience and built with intention.

Our journey hasn’t been easy, but we keep planting, building, and growing—because this dream is ours, and we believe in where it’s headed. Every season brings new lessons, new blooms, and new ways to connect with the people and places we care about most.

If there’s one thing we want people to know, it’s that flowers aren’t just pretty. They’re powerful. They carry stories, memories, joy, and hope—and we’re honored to grow them for the people who need a little light in their lives.

You can find us three times a month at the Beaumont Farmers Market and once a month at the Riverfront Farmers Market.

We’re also part of Artisan Farmers Market, where you’ll find weekly flower pickup, access to our Harvest Bloom Club (our fall flower subscription), and details on upcoming events.

While our goal is to build the infrastructure to grow and harvest year-round, there may be times when we take short seasonal pauses from market attendance.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
We’d start with breakfast at The Twisted Egg Shack in Beaumont—one of our favorite places with amazing food and the kindest staff (and honestly, we’d probably be back for lunch too). From there, we’d swing by both markets: the Riverfront Farmers Market for the peaceful water view, and the Beaumont Farmers Market to stock up on local favorites and catch up with familiar faces.

Realistically, we’d fit in a few farm errands and probably a quick workout—because there’s always something to take care of, and moving a bit helps us reset.

We’d definitely swing through our favorite nurseries to see what’s in stock—or which flowers and plants might need a little rescuing. We grow flowers for a living, but we love growing for fun, too.

Then maybe a stop at the bookstore to slow things down, pick out something new to read, and grab a craft or project to bring back to the farm—just something to help nurture our creative sides.

We’re still getting to know this area, and every outing feels like a little adventure. There’s always something new to discover—and we love finding it together.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
We want to give a heartfelt shoutout to our incredible market communities—Beaumont Farmers Market and Riverfront Farmers Market. When we were just getting started—freshly accepted or in the process of applying—a tornado and flooding hit our farm. These markets welcomed us anyway, gave us room to grow, and supported us through every single stage of rebuilding.
