We had the good fortune of connecting with Stefani Wille and we’ve shared our conversation below.

Hi Stefani, can you talk to us a bit about the social impact of your business?
We provide safe, nutritious, convenience that is both diabetic and celiac safe. It has become easy to find “keto” products in the market place, but not for those with additional dietary restrictions. Our specialty is accommodating our guest needs, from dairy free to egg free. Every day we fresh bake real food that is available for walk in ( some items require pre order) from our dedicated Gluten-free kitchen.

Alright, so let’s move onto what keeps you busy professionally?
A strong work ethic was instilled in me from a young age, and because of not pursuing higher education, grit and guts were my path through the Mc life. Working my way through the ranks with a McDonald’s franchiser laid the humble foundation to chase the dream of self employment. I learned quickly that I could stand out by showing up on time and pursuing the zenith of any given position. By embracing each entry level task, I became the go to person for training and accountability, then management, and eventually public relations. I learned what works in a fast paced environment, how to manage people, inventory, time and customer experience. Being surrounded by poor management taught me even more. It was the realization that employees are viewed as disposable by large companies and are often berated by superiors and even verbal abused by customers, all for very little pay, that woke me up to the possibility of spearheading something better. It was time to produce a product that did good, not harm, by people that genuinely love what they do. I saw a need in my own family for quality sugar free and gluten free products. At that time I began baking out of my home kitchen and delivering as far north as the Woodlands and as far south as Sealy. This eventually led to the opening of Kakes Keto Bakery and Coffee in Katy Tx.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
To eat and drink : Caroline’s Healthy Eatery in Spring, Manna – Bread From Heaven in Tomball, Harvest Kitchen and Bakery in Katy, and any Bucee’s! I love that Houston has a diverse variety for low carb and gluten free options. I love to visit the local farmers markets, state parks and beaches,

Who else deserves some credit and recognition?
I want to dedicate this shoutout to my amazing rock of a husband, Kyle Wille. The sacrifices he has made for me, our 3 boys and this business, are a direct reflection of his love for Jesus. It is also important to recognize the amazing team at Kakes, that has fought along side me through the pandemic and are still here. Faiza Abbas, Emily Gammon, Devin Hickman, Jessica Jordan, Pamela Donahue, Quinn Gammon, and Simon Ton.
