We had the good fortune of connecting with Tara Arceneaux and we’ve shared our conversation below.

Hi Tara, we’d love to hear more about how you thought about starting your own business?
My thought process was generational wealth & having something we owned.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
We purchased our food trailer in July 2020. Our first day opened for full service was in October 2020 we sold out in 2 ½ hrs. It has been so much fun since then changing our menu everyday. We post our menu on social media everyday (Facebook, Snapchat, & Instagram). With the help of our customers we have been able to create some staple days for everyone to look forward too(Taco Tuesday, Boil Bag Wednesday, & Catfish Friday). The hardest part is being in a food trailer & being high demand (not a bad thing btw) you tend to sell out pretty fast because of limited space. We have adjusted in many ways so far to meet the demand by adding equipment, more staff, shelving, & more prep time to handle the incoming product. This is a family businesses ran by My husband Terrance & I. With the help of the kids Talise & Terrance Jr. Our goal is to bless as many taste buds as possible with the right spice for the right price. We stick to our Cajun roots Cooking everything homemade, with passion & love.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Not the person to ask we don’t have time to go anywhere lol

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
My shoutout goes to Terrance, Talise, & Terrance Jr. It has been many long days & nights in the food truck/Catering business. They have my back & will do everything they can to help me. This business was started with them in my mind but they have taught me so much about being patient, understanding, & working thru situations. I couldn’t ask for a better team.
