We had the good fortune of connecting with Roniqua Griffis and we’ve shared our conversation below.

Hi Roniqua, can you walk us through the thought-process of starting your business?
My thought process behind starting my own business really came from my own journey. Being in a wheelchair, I wasn’t always confident. It took time for me to truly become comfortable with who I am, how I move through the world, and how I show up. But once I started building that confidence, I realized I wanted other people to feel that same thing no matter what their situation looks like.

With WheelSimpleCooking, I wanted to create a space where people could learn how to cook without feeling judged, overwhelmed, or like they had to be perfect. Cooking can be intimidating, so my goal is to make it simple, fun, and confidence-building. I want people to leave feeling like, “Okay, I can actually do this.”

And with my faith-based brand, RFJ/Rolling for Jesus, that confidence also connects to my faith. My faith is a big part of who I am, and I wanted to create something that encourages people while still feeling stylish, bold, and real.

For me, starting my businesses was really about purpose. It was me stepping out on faith, using my own story, and saying, “I have something valuable to offer.” I want people to know that confidence is possible, even if your journey looks different

What should our readers know about your business?
What sets my businesses apart is that they both come from my real life, my faith, and my own journey with confidence. As a wheelchair user, I wasn’t always confident. It took time for me to really become comfortable with myself and how I show up in the world. Once I started growing in that confidence, I knew I wanted to create brands that helped other people feel confident too, no matter what their situation looks like.

With WheelSimpleCooking, I help people build confidence in the kitchen through simple, fun, hands-on cooking classes. I want people to feel comfortable learning, asking questions, and trying something new without feeling judged. With RFJ by Roniqua / Rolling for Jesus, my faith-based brand, I want to encourage people to be bold in their faith and still feel stylish and confident.

It has not always been easy. I’ve had moments where I doubted myself, overthought everything, and wondered if people would really support what I was building. But I kept going, kept praying, and kept reminding myself that my story has purpose. What I want the world to know about me and my brands is that confidence can be built, faith can carry you, and your situation does not take away from what you have to offer.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If my best friend was visiting, I would definitely plan a week around experiences, good food, and pretty scenery. I’m the type of person who loves being by the water, so I would take them somewhere like Lake Conroe or The Woodlands Waterway where we can relax, talk, take pictures, and just enjoy the view.

For food, I’m always looking for restaurants that have both good food and a good atmosphere. I love a place where the scenery, the service, and the food all make it feel like an experience — not just a meal. I would plan a mix of cute brunch spots, dinner with a view, and maybe somewhere fun for dessert or mocktails.

I’d also want them to experience the softer, peaceful side of the city — walking around, shopping, sitting by the water, and finding places that feel intentional. For me, showing someone a good time is not just about being busy the whole trip. It’s about creating moments they’ll actually remember.

Who else deserves some credit and recognition?
First, I have to give credit to God, because my faith has really been the foundation of my journey. There were times where I wasn’t confident, especially being in a wheelchair and learning how to fully embrace who I am, but God kept building me and reminding me that my life still has purpose.

I also want to shout out the people who have encouraged me, supported my ideas, prayed for me, and reminded me that I could do more than I sometimes believed I could. Having people speak life into me has meant a lot.

And honestly, I want to give a little credit to the version of me who kept going even when I was scared. Starting a business, showing up online, and putting my story out there hasn’t always been easy, but I’m proud that I didn’t let fear or insecurity stop me.
