We had the good fortune of connecting with Michelle Jiron and we’ve shared our conversation below.
Hi Michelle, what makes you happy? Why?
Food! Food makes me happy! It brings people together. Enjoying a good meal with family and loved ones always brings joy to my heart. Having the ability to create dishes that are not only delicious but pleasing to the eye makes an incredible experience. I love seeing people take photos of their meals because it brings them happiness that they want to remember. Sushi is meant to be shared among friends. If you think of gatherings, Thanksgiving or Christmas, the meal is one of the happiest moments for everyone. Even if it’s a potluck, people bring their favorite dishes to share. Food in any culture brings people together, for good times, great stories, and lots of laughter. It’s good for the body and soul.


Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
Our moto is to dine twice, once with your eyes and then your pallet. Sushi is an art and an expression of our chefs. Although the same menu item is ordered, it may not look the same twice. We encourage our chefs to put forth their creativity with our dishes and to design each dish as a masterpiece. Fruits and vegetables are important in a healthy diet and we use the colorful and tasteful garnishes to enhance each guests unique experience.
Having a reliable team of motivated individuals have helped us grow tremendously. I feel that it is important that you treat employees with respect and you get the same in return. We have a supportive group of people that are reliable and with that, have allowed us to focus on other important factors of our overall success.
It takes a lot of time and commitment to own and operate a family business; however, the relationships we create with our guests are worth every ounce of all the blood, sweat, and tears.


Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I would take my friends to eat at Wazabi! It is quaint and cozy and offers awesome food and fabulous martinis We’d spend an afternoon on Texas Avenue for ice cream or some refreshing agua fresca from Sabor of Mexico and take a stroll around Town Square to visit the Baytown Sculpture Trail. We would make sure to vote for our favorite sculptures. I would plan for us to take a leisurely bike ride along the 20 miles of bike trails that the City of Baytown has to offer. At some point along the ride we would stop by O’Neil’s on the water for a cocktail or two and a bite to eat. For some night life, we’d head down to 510 West on Texas Avenue for a charcuterie board and a show on a Friday or Saturday evening.


Who else deserves some credit and recognition?
My shout out is to Sabor of Mexico. It’s right next door to Wazabi and my shout out to them is for their continued support, generous hospitality, and of course, their amazing homemade ice cream! We couldn’t ask for better neighbors!
