We had the good fortune of connecting with Lindsay Gonzales and we’ve shared our conversation below.

Hi Lindsay, can you walk us through the thought-process of starting your business?
I am a bird nerd and loved the egg development portion of my laboratory training and research for genetic development during undergrad. I further learned about the ins and outs of orinthinology – the study of birds – during my masters program at East Texas A&M. I decided to sell a few chicks I incubated in a hatching egg raffle online. For $5 I turned a small profit and paid a house bill. I was hooked. I did it again. And again. And I learned tricks of hatching and increasing my hatch rate for every breed I incubated. I shared my journey and accrued an online following FAST. I started my Facebook this year – and now have 800 followers a little less than 6 months into my passion project turned side hustle.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
I’m actually a 100% online high school science teacher that currently teaches Advanced Placement Biology, Chemistry, and Environmental Science. I’ve been teaching for 12 years this upcoming school year. Humble Hatchery makes a teachers salary doable as a small second job. I am online teaching to be present for my two young sons 5 and 7 – my oldest being on the spectrum. My husband was very sick for months and in and out of the hospital. The hatchery was born when I needed to have a hobby and make extra income for bills on my plate. The flexibility of being virtual and the hatchery has been a huge blessing and I’m very thankful it’s worked for me and my family.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
They’d be taken to a Houston professional sports game – Astros, Texans, Rockets, Dynamo – then grab Tex Mex. I’m a Friendswood native, so Gringos Mexican Kitchen “The Original” comes to mind. I’d insist on Galveston Island and the San Luis pool day and beach time. Maybe a spa treatment and then seafood at Gaidos. If we could get a boat to go out to the Gulf for a sunset cruise, I hope they’ll remember Houston for its uncommon gems – doing as the locals do!

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
I have to credit a breeder that has a HUGE online following that shows such grace and passion for her homestead – McIntires Mini Mansion. She is a great role model of how to run your poultry business right and with good morals. In every box she takes each egg and carefully wraps it for shipping. Hundreds of eggs a day at times – to ship all over the US. She hustles hard and doesn’t let online drama consume her. Catherine McIntire – thank you for being my chicken soul sister and mentor!
